    Let's talk about these Sriracha Lime Chicken Tacos.  Juicy chicken, sweet peppers and onions wrapped up in a wholewheat tortilla and topped with juicy pineapple avocado salsa. 30 minutes to taco perfection!

    Okay... everybody... listen up... our taco game is strong today. And as a lover of all things taco, we're saving ourselves a lot of time and a lot of calories here. Because I've got some magic up my sleeve with this one...

    So, you know how so many of those taco recipes out there have a mountain of ingredients that you need to climb, just to get that taco into your hand. Like chilli powder, chipotle paste, ancho chillies... yada, yada, yada...

    Nope. Not these 5 ingredient chicken tacos. We're talking Sriracha lime rub... aaaaaaand... that's it. That is all. Because in summer, we want sunshine. And we also want the sweet sound of bees buzzing and cicadas chirping. But what we don't want is to measure out 9 different ingredients with 4 different spoons. No... we are not about that life. We are about consuming our own body weight in spicy chicken tacos... that's our kind of lyfe!

    We are about the one spice life. This Sriracha lime rub can be found at your local Aldi store. And nope... not a sponsored post. So, this is just straight up awesome vibes from a spicy lime, almost cajun style spice. Like your tacos spicy... me too. And this spice totally delivers. It's spicy and smokey but that underlying citrus brightness from the lime makes it completely bareable and dare I say even very addictive. It goes like this... spice... citrus... smokey ... bright... layers of flavour in your 5 ingredient 15 minute taco.

    What you can do with the other 15 minutes of your meal prep time, is to whip up this pineapple salsa. Just to bring some sweet heat to the party. Because we're those kinds of people... the taco loving, juice fruit salsa making kind of people. And maybe some yogurt with chopped cilantro... because that will take you all of 10 seconds!

    All you need for these is some Sriracha lime rub, chicken, a bell pepper (whatever colour ya got) and a red onion and some wholewheat tortillas.

    Ingredients

    For the Tacos

    • 2 chicken breasts , cut into strips
    • 1 yellow bell pepper
    • 1 red onion
    • 1 tablespoon olive oil
    • 2 tablespoon Sriracha Lime spice rub
    • wholewheat tortillas

    For the Pineapple Salsa

    • ½ pineapple small diced
    • ½ red onion
    • ½ avocado
    • ½ jalapeno pepper
    • juice of 1 lime

    Instructions

    • Cut the chicken into long strips, and toss with the Sriracha lime rub.
    • Heat a skillet over a medium heat and add the olive oil.
    • Cook the onion and pepper until soft and translucent.
    • Remove the pepper and onion to a bowl and add the chicken to the pan.
    • Cook the chicken for about 5 minutes, or until cooked through.
    • Season according to taste.
    • Add the pepper and onion back to the pan and keep warm.

    To make the salsa chop all the ingredients and mix together in a bowl. Season according to taste.

      Serve with yogurt coriander sauce if desired. To make the sauce, simply mix yogurt and coriander.
