Hi! How are ya? I’ve got a short and sweet post today. Literally… sweet. Okay, so as I get to grips with this weight watchers thing, it’s turning out that I need SNACKS!!!! They are my life blood and if I can’t do snacks and/or sweet treats in a smart and low point way, I’m just not gonna make it. So I set about to try and figure this one out.
So, I set to work to create an amazing sweet treat/ snack for us. Needless to say, this caramel had me at “hi I’m date caramel. And I only need 2 ingredients.” I was sold hook, line and sinker. And you will be too. Don’t worry… I’m not expecting you to snack on straight up caramel, although I’m pretty sure that would be amazing.
There’s an amazing recipe comin’ at ya tomorrow that uses this little 2 ingredient super sauce. Just thought I’d let you get a head start. Because once you see these your gonna be like aaaalllll the heart eye emoji’s please. Mmmmm hmmm. So, the 2 ingredients that you need to make this sauce are dates (duh.) and some vanilla. You can through a little salt in there if you want, and who doesn’t want, but I thought you’d probably give me the salt for free seeing as you already got that sittin’ in your cupboard.
For the below nutrition info the points and calories are based on a Tbsp serving. The secret tip is that when you blend the dates in the food processor with the water, use water that has just boiled. You’ll get a much smoother caramel more quickly than using water straight from the tap. And I’m out. Until tomorrow vegan date caramel lovers! Mwah!
Simple Vegan Date Caramel
A simple vegan caramel that actually tastes like caramel. Sticky, sweet and ready for your favourite dessert.
- 200 g (1 cup) dates
- pinch salt
- 250 (1 cup) boiling water
- Place the dates in the bowl of a food processor fitted with the blade attachment. Slowly trickle in the boiling water while blending. Add enough water to reach the desired consistency. Mix in salt. Use right away or store in an airtight jar for about a week.
