How To Make The Best Red Lentil Curry

A quick, easy and healthy recipe that is deliciously spiced with fragrant Indian spices. 

Start with fragrant Indian spices.  You can use whole spices and grind them yourself, but to keep things quick and easy we're using ground spices!

Start with the best foundations

Garlic! As much or as little as you want!

Punchy onions *red or white work.

Dried red lentils *no need to soak them. 

Cook your onions, garlic and lentils until they're tender and fragrant. Add in some tinned tomatoes. *Bonus points if you add in fire-roasted tomatoes!

Add in a handful of spinach and let it wilt into the curry. Serve it with fluffy white basmati rice and naan bread for the perfect healthy but comforting dinner!
