Start with fragrant Indian spices. You can use whole spices and grind them yourself, but to keep things quick and easy we're using ground spices!
Cook your onions, garlic and lentils until they're tender and fragrant. Add in some tinned tomatoes. *Bonus points if you add in fire-roasted tomatoes!
Add in a handful of spinach and let it wilt into the curry. Serve it with fluffy white basmati rice and naan bread for the perfect healthy but comforting dinner!
