Easy One Pot Bacon Corn Pasta (Creamy)

This creamy corn pasta is the ultimate one-pot pasta. It's full of simple pantry ingredients you probably already have meaning it's an easy pasta recipe that feels perfect for summer. It's got a touch of cream for indulgence and only takes 30 minutes from beginning to end.

Ingredients

  • ½ pound (0.5 pound) spaghetti
  • 5 ounces (5 ounces) bacon or pancetta
  • 2 cups (308 g) sweet corn, can be frozen
  • 1 (1) white onion, diced
  • 3 cloves (3 cloves) garlic, minced
  • 1 cup (238 g) cream
  • 2 cups (470 g) chicken or vegetable broth
  • ½ cup (12 g) basil chopped
  • 3 tablespoons (3 tablespoons) thyme, picked

Instructions

  • Heat a high sided frying pan over a medium heat and cook the bacon until golden and crispy. Remove the bacon to a plate and pour off half the bacon fat.
  • Add the onion and garlic and sweet corn to the pan and gentle sauté until soft and translucent. Pour the chicken broth and spaghetti into the pan and bring to a boil. Turn the pan down to a simmer and let the pasta cook for about 6 minutes. Pour the cream into the pan and continue cooking until the pasta is al dente.
  • Once the pasta is cooked add the bacon back to the pan and stir the chopped herbs through and divide the pasta between 2 plates.
