Moroccan Roasted Cauliflowers
Are you ready for a show stopping Moroccan feast that's a 30 minute meal? Then this dinner is for you. Oh yeah... and it's totally weight watchers friendly!
- 2 baby cauliflowers or 1 large
- 1 Tbsp olive oil
- 1 Tbsp ground cardamom
- 2 tsp pomegranate molasses
- salt pepper
Rose Harissa Yogurt
- 150 g Fat Free Greek
- 2 Tbsp Rose Harissa Paste
- 2 Tbsp chopped cilantro/coriander
- pomegranate seeds
Preheat the oven to 180c
Place the cauliflowers into a small roasting pan and drizzle with the olive oil, molasses and then sprinkle with the cardamom and salt and pepper.
Roast in the oven for about 20 minutes covered, or until a small knife goes through without resistance.
