Moroccan Roasted Cauliflowers

Are you ready for a show stopping Moroccan feast that's a 30 minute meal? Then this dinner is for you. Oh yeah... and it's totally weight watchers friendly!

Ingredients

  • 2 baby cauliflowers or 1 large
  • 1 Tbsp olive oil
  • 1 Tbsp ground cardamom
  • 2 tsp pomegranate molasses
  • salt pepper

Rose Harissa Yogurt

  • 150 g Fat Free Greek
  • 2 Tbsp Rose Harissa Paste
  • 2 Tbsp chopped cilantro/coriander
  • pomegranate seeds

Instructions

Directions

  • Preheat the oven to 180c
  • Place the cauliflowers into a small roasting pan and drizzle with the olive oil, molasses and then sprinkle with the cardamom and salt and pepper.
  • Roast in the oven for about 20 minutes covered, or until a small knife goes through without resistance.

For the yogurt:

  • Mix all the ingredients together.
