Cut the peppers in half lengthways and take out the ribs and seeds.
In a skillet, heat 2 teaspoon oil and add the chopped onion and garlic. Let this sweat for a few minutes, until translucent. Add the ground turkey and the cajun seasoning and cook over a medium heat until the turkey is cooked through.
Stuff the peppers with the turkey mixture and top with the cheese. Place under the grill or in the oven for a few minutes until the cheese melts. Serve with chunky hand cut salsa and some olives, coriander and lime wedges and sliced chillies. Drizzle with the lime crema.
