Spicy Turkey Mini Bell Pepper Nachos
Spicy turkey, mini bell peppers and gooey melted, bubbly cheese drizzled with lime crema and cilantro. Low carb nachos are the new Mexican.
- 10 mini bell peppers various colours
- 500 g (1 pounground turkey
- 1 onion chopped
- 2 cloves garlic
- 2 Tbsp cajun spice mix
- 150 g (1/2 cup approlight mozzarella cheese
- 5 black olives sliced
- sliced chillies
- lime crema
- 50 g (1/4 cufat free yogurt
- juice of 1 lime
- salt & pepper
Cut the peppers in half lengthways and take out the ribs and seeds.
In a skillet, heat 2 tsp oil and add the chopped onion and garlic. Let this sweat for a few minutes, until translucent. Add the ground turkey and the cajun seasoning and cook over a medium heat until the turkey is cooked through.
Stuff the peppers with the turkey mixture and top with the cheese. Place under the grill or in the oven for a few minutes until the cheese melts. Serve with chunky hand cut salsa and some olives, coriander and lime wedges and sliced chillies. Drizzle with the lime crema.
