This falls newest taste sensation? Meet Spiced Plum Crumble Bars! Sweet, juicy spiced plums sandwiched between 2 layers of buttery, brown sugar, oat crumble mix. All baked to chewy perfection. This is fall snacking perfection.
In a medium sauce pan over a medium heat, cook the plums, sugar and spices until the plums are soft and starting to lose their shape. A thick jam like consistency is what you’re looking for. Once fully cooked and thickened, set aside to cool. Remove the star anise from the jam.
To make the oats
In a food processor place the rolled oats, flour, butter and brown sugar. Pulse to blend the oats until a butter crumbly mixture forms. You should be able to form balls of crumble by squeezing the mixture in your hands.
Preheat your oven to 350f and line a 9x9 square metal baking tray with baking paper.
Press ¾ of the oat mixture into the baking pan and press firmly using your fingers. Spread the cooled jam over the oat mixture and gently top with the remaining crumble topping.
Bake in the preheated oven for about 20-25 minutes. The jam should be bubbling up the side of the pan when cooked. Leave to cool before cutting into 20 bars.
