30 Minute Asian Beef. Pepper seared beef with a creamy miso sauce and a sesame rice is elegant enough for company, but quick enough for a busy weeknight.

Ingredients

  • 1 8 oz steak
  • 1 cup brown and wild rice mix
  • 10 baby beetroot
  • 10 baby rainbow carrots
  • 2 Tbsp olive oil

For the Sauce

  • 1/2 cup 125ml Greek yogurt
  • 2 Tbsp brown miso paste
  • 1 Tbsp toasted sesame oil
  • squeeze of half a lime

Instructions

  • Cook the rice according to the package instructions.
  • Preheat the oven to 200c
  • Cut the baby veggies in half and coat with the olive oil and sprinkle with salt and pepper.
  • Wrap in foil and roast in the preheated oven until cooked through. About 20 minutes.
  • Meanwhile make the sauce.
  • Whisk all the sauce ingredients in a bowl and season to taste.
  • Cook the steaks on the grill or in a pan for about 2 minutes per side for medium rare.
  • Serve over the rice, with the veggies and drizzle with the sauce.
