Be sure to choose short ribs with a good layer of fat and good marbling throughout the meat. Use paper towel to make sure the ribs are dry before searing.
Take your time and get a good sear on the short ribs. Let them turn very golden brown and develop a good crust.
Add the onions and garlic to the pan and let them cook for about 5 minutes, until soft and translucent and starting to turn golden.
Pour the beer into the pan and use a wooden spoon to scrape up any brown bits. Add the ribs back to the pan and simmer for 4-6 hours until the beef falls off the bone.
