Ingredients
  

  • 4 cod fillets about 6 oz each
  • 2 oranges thinly sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
For the Citrus Hoisin Glaze:
  • cup hoisin sauce
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 clove garlic minced
  • Juice of 1 orange

Method
 

  1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it with cooking spray.
  2. Prepare the glaze: In a small bowl, whisk together hoisin sauce, soy sauce, honey, rice vinegar, grated ginger, minced garlic, and orange juice until well combined.
  3. Arrange the cod fillets on the prepared sheet pan. Drizzle olive oil over the fillets and season with salt and pepper.
  4. Brush the glaze generously over each cod fillet, ensuring they are well coated.
  5. Place the orange slices around and slightly under the cod fillets on the sheet pan.
  6. Bake in the preheated oven for 18-20 minutes, or until the cod is cooked through and flakes easily with a fork.
  7. Serve immediately: Transfer the cod and orange slices to plates and drizzle any remaining glaze from the pan over the top.
