Easy Spicy Szechuan Noodles

These easy Szechuan-inspired noodles are tossed in a bold, spicy sauce with garlic, ginger, soy sauce, and hoisin. With tender noodles and crisp snow peas, this flavorful dinner comes together in just 30 minutes.

Ingredients

  • 8 ounces dried noodles, such as Chinese wheat noodles or spaghetti
  • 2 tablespoons vegetable oil
  • 1 tablespoon fresh ginger, minced
  • 3 garlic cloves, minced
  • ½ cup green onions, chopped
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons Szechuan chili paste or sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • ½ cup chicken or vegetable broth
  • ½ cup snow peas, trimmed
  • - Crushed peanuts or sesame seeds, for garnish (optional)

Instructions

Cook the Noodles

  • Boil the noodles: Bring a large pot of water to a boil. Cook the noodles according to the package instructions until just tender. Drain and set aside.

Make the Sauce

  • Mix the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, Szechuan chili paste, hoisin sauce, sugar, and chicken or vegetable broth. Set aside.

Stir-Fry the Vegetables

  • Sauté the aromatics: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ginger and garlic and stir-fry for 30–60 seconds, until fragrant.
  • Cook the snow peas: Add the snow peas and stir-fry for 2–3 minutes, until bright green and tender-crisp.

Combine and Serve

  • Toss with the sauce: Add the cooked noodles and prepared sauce to the skillet. Toss over medium-high heat for 2–3 minutes, until the noodles are heated through and evenly coated.
  • Finish and serve: Remove from the heat and toss through the chopped green onions. Garnish with crushed peanuts or sesame seeds, if desired. Serve immediately.

Notes

  • Adjust the heat: Szechuan chili pastes vary in intensity. Start with less if you prefer a milder dish, then add more to taste.
  • Customize the noodles: Add cooked chicken, shrimp, or tofu for extra protein. You can also swap the snow peas for broccoli, mushrooms, or bok choy.
  • Storing and reheating: Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a skillet with a splash of water or broth to loosen the sauce.
